To get that special coffee flavour, you should have a decent stock of Monin syrups. The 5-pack that seems to be only available for Christmas is a good place to start:
- Crème brûlée
- Roasted hazelnut
- Gingerbread
- Praline
- Caramel
The crème brûlée syrup is a gorgeous concoction and it is surprising how close the flavour is to the real thing. I will need to get a full sized bottle now the 50ml sample has run out. Caramel is a nice flavour too as an alternative to plain sugar/sweetener and gingerbread adds a spicy hint to the cuppa. The nutty syrups are OK if you like that sort of thing.
